Wow Jan 10 already!

January is flying by and if the weather stays like it has been in Northeast Ohio, I will become a HUGE fan of winter.  No Snow on the ground.  High 30s- Low 40s and sun, glorious sun shining!  I am sure that the snow will be hitting us up here in April and I will be crying.  But for now, I am loving this.

Baby girl is finally over this annoying cold and her belly issues of last week.  That was the most unpleasant experience!  I have been able to run, run and run on our treadmill.  It has been great!  Newbie got the cable guys out here to install cable and my new DVR.  He put up the tv last night and the 4 miles I put in today were much more pleasant with a new episode of Castle to watch.

I was hating plugging my miles into dailymile everyday though and seeing that slower pace pop up.  So I did a little research and found a Treadmill Pace Conversion chart and I am a much happier camper!  All this time I was thinking I had slowed down quite a bit from my half in May, but in actuality I was running a 9 min pace on my slow times and jacking it up to an 8:10 or even 7:13 on my workouts.  I feel better now!  I was afraid along with turning 30 came slower running...  There were too many changes as it was with that birthday!

So I discovered our new favorite snack food and will be needing to make a second batch here asap.  Baby girl and I are digging on No-Bake Energy Bites from Maggie over at one of our favorite blogs, Smashed Peas and Carrots.

No-Bake Energy Bites

(makes 20-25 bites)

1 cup oatmeal

1/2 cup peanut butter (or other nut butter)

1/3 cup honey

1 cup coconut flakes

1/2 cup ground flaxseed

1/2 cup mini chocolate chips

1 tsp vanilla

Mix it all together.  Chill for an hour and then make into balls.  We added a little more honey and no coconut for us.  Plain cheerios instead.   About 96 calories per bite.

Next week I am going to try a bunch of flavor combinations and post them with our reviews!

Any healthy easy snacks that you or your family loves to chow on? Please share your recipes!

And just because this post wouldn't be complete without a picture:
